Delicious Paleo Beef Stir Fry

A paleo stir fry jammed pack with delicious and good for you veggies that will make for great lunches for the rest of the week.

Ingredients

  • 1-2 tbsp coconut oil
  • 2 medium-sized red onions
  • 6-8 ribs celery
  • 1 head cauliflower chopped
  • 1 head medium-sized head of broccoli
  • 6 sticks large carrots or 1 bag of baby carrots
  • 2 lbs ground beef cleanest meat you can get
  • 2 tsps ground sage
  • 2 tsps pink himalayan sea salt
  • 2 tsps pepper
  • 2 tsps turmeric
  • 2 tsps thyme

Instructions

  1. This is a doubled up recipe so if you want you can cut it in half, but my boyfriend and I love doubling this baby up so that we have dinner for that night and then lunches for the rest of the week. I start by cutting up the carrots, onions, celery, cauliflower and broccoli so they're ready to be thrown in when the time comes. 

    Since we make such large servings we typically split up the cooking with the onions and ground beef in a pan and all the rest of the veggies in our wok. You can also use another pan, but woks are nice if you have a flame stove-top. 

  2. I split a tablespoon of coconut oil between both pans and start cooking the meat and veggies. As the ground beef is cooking in the pan with the onions make sure to break it up so it cooks evenly. 

  3. Then add in those delicious spices because we all know spices make or break a meal!

  4. When ground beef is fully cooked and your cauliflower and broccoli are tender to your liking you can move the ground beef into the wok and stir into it.

  5. Once completely mixed in you can serve and enjoy!
